Black tea is the most commonly served tea in the United States.  Tea leaves are picked, inspected and sorted by hand.  Withering takes place as water evaporates and the natural process of fermentation takes place.  Fermentation, also know as oxidation, does not produce alcohol but in the case of black tea the enzymes oxidize the tea leaf and turn it brown just like a tree leaf in the fall changes from green to brown.  It is this process of oxidation that creates the wonderful undertones of black tea.  The tea leaf is then exposed to high temperature over fire or commercial ovens.  After firing the black tea is sorted by sifting the leaf with various size screens and then blended with tea leaves grown in various regions to create the wonderful black teas created by Harney and Tazo Tea Companies.
